The Instant Pot phenomenon is happening in our RV. Long before we moved in we bought an IP so I can get practice using it. I had a few fears and was timid on using it at first. As I began using the IP, I began to feel more comfortable using it and not comfortable enough to stray to far from a recipe. I follow all the rules and take extra care cleaning it. Recently, I have bought my first accessory for the IP – New Silicon Seals.
So, I have been using it a least 3-4 times a week. Cooking anything from Rice and Beans to Hamburger Mac and Cheese. I have even made Cheesecake in my IP. Finding most of my recipes on Pinterest, I was recently introduced to a Facebook Group of IP Users Melanie's IP Dinner Club. I know her personally from Church, I have taught her AWESOME children in choir and AWANA.
Melanie posted yesterday (1/22/18) a recipe that peeked my interest because Marsala is my FAVORITE chicken dish. So why not try it tonight. I already had chicken thawing and was looking for a recipe to use it. A quick trip to the grocery store I got the items that we don't keep in stock here in the RV.
Melanie posted this recipe from Pressure Luck Cooking and we tried it. We are a family of 3 and each of us had 2 servings and we have leftovers for tomorrow. I cooked squash on the side for the vegetable portion of our well balanced meal!

So, we are currently in Tyler, Texas. There is no Publix around for over 1000 miles so there nearest grocery store to here is a Super 1 Foods. They had all the items except the Sun Dried Tomatoes (SDT) in a jar. So with all the items in had I headed home to make this AWESOME looking meal that my mouth was watering just looking at the pictures. I read and reread the instructions and recipe again. And than I began. I followed the recipe step-by-step, moment by moment. And about 30 minutes later, we had dinner and no pictures to prove it. We all loved it and it will definitely be made again. I made a few modifications to the recipe because I could not find all the ingredients on the list.
Here are the modifications I had made:
- I found dried Sun Dried Tomatoes – I used the tomatoes but used Olive Oil when it calls for the SDT oil.
- I added an additional 1/2 broth to make sure the noodles were covered. Made a little more sauce but that did not bother us.
- I used shredded Fresh Parmesan Cheese – This made it a bit stringy but it was awesome.
- I also used White Button Mushrooms instead of the Baby Bellas.
